Lasagna Rolls

Today I decided to make lasagna and thought that I would make one to eat this week and make one for the freezer.  Then as I was making the filling, I decided to do lasagna rolls.  I know that people have made them before...but I have not made them...so I thought I would show you my process.

 First...made the filling.
 Laid the noodle out flat on a cutting board (helps with mess).
 Spread the filling out.
 Roll is up...
 Line them up in a pan...
Cover with sauce.  I also added some Parmesan cheese on top of the sauce.

I use the exact same recipe I use for regular lasagna.  The other reason this is good is option for our family is because I know the exact points for each of these rolls.  The points plus calculation for these are 8 a piece.  Which really with a nice size salad...totally doable.  I had sausage in the sauce, but I could totally leave that out the next time.

What is in your filling?

In the filling is:
1 24 oz container of 1% cottage cheese
1 egg
2 cups shredded part skim mozzarella cheese
1/4 cup parmesan cheese
sprinkle some italian seasoning

I just recalculated because I forgot the parmesan cheese yesterday...it's 8 points per not 7! Still not too bad!
